Turkey Taco Cottage Cheese Bowl

Ingredients:
Preparation:
  • 1/2 cup seasoned ground turkey or beef

  • 1 tsp taco seasoning

  • 1/2 cup cottage cheese

  • 1/4 cup black beans

  • 1/4 cup corn kernels

  • 1/4 cup salsa

  • 1/4 cup shredded cheddar cheese

  • 1/2 avocado, sliced

  • 1 lime wedge

  • Fresh cilantro

  • Brown the ground turkey or beef in a skillet, add 1 tsp taco seasoning and 3 tabelspoons water. Stir to simmer. Remove from heat.

  • In a bowl, layer cottage cheese, cooked ground turkey, black beans, corn, and salsa.

  • Sprinkle with shredded cheese and top with avocado slices and cilantro.

  • Squeeze lime juice over the top and serve immediately.
