Greek Yogurt Pancakes

Ingredients:
Preparation:
1/2 cup milk
1 cup flour
1 tablespoon sugar (optional)
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 cup nonfat Greek Yogurt
1 tsp vanilla
Cooking spray for pan
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, mix the Greek yogurt, egg, milk, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; a few lumps are okay. Fold in the blueberries if using.
*Important: Allow the batter to rest for about 10 minutes before cooking.
Heat a lightly sprayed griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake.
Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2-3 minutes until golden brown. Brown on both sides and serve hot.
